Step 1
Add eggs to a saucepan: Crack the eggs directly into a nonstick skillet or saucepan. Don’t beat or season them yet! Add the butter and turn the heat to medium.
Step 2
Begin to stir: Using a rubber spatula, stir the eggs continuously. Make sure to scrape the bottom and sides of the pan as you go.
Step 3
Remove from the heat: After 30 seconds, take the pan off the heat but keep stirring. Give it 10 seconds to cool down, and then place it back on the heat. Repeat this process for 3 minutes.

Step 4
Add the cheese and serve: Remove from the heat for a final time and add in the Boursin Cheese. Stir everything together before lightly seasoning with salt. Plate the eggs, garnish with fresh chives, and enjoy!
Step 5
Serve them on top of toast or a bagel.
